Avocado, cottage cheese, tomato spread

This tangy avocado salsa and creamy cottage cheese will give your morning Weet-Bix an extra flavour boost!

Ingredients:

  • 2 Weet Bix™ Cholesterol Lowering
  • 1/4 cup low fat cottage cheese
  • 1/4 avocado, diced
  • 4 cherry tomatoes, diced
  • 1 tsp lemon or lime juice
  • pinch of salt and pepper to taste (optional)

Method:

  1. Combine avocado, tomato, and juice from the lemon or lime. Stir gently.
  2. Spread cottage cheese over Weet-Bix™ and spoon avocado salsa on top. Season with salt and pepper to taste.

Tips:

  • For an Italian twist, replace citrus with 1/2 tsp balsamic vinegar.
