Ingredients:
- 800g apples, cored (4 medium apples)
- 1/2 cup water
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 cup sultanas
- 1 tbsp lemon juice
- 4 Weet-Bix™, crushed
- 1/4 cup whole spelt or wholemeal flour
- 2 tbsp packed brown sugar
- 1/4 cup margarine (60g)
Method:
- Cut apples into 1 cm thin slices. Turn on oven to 180°C.
- While oven pre-heats, place water, spices, and apple slices into a large oven-proof skillet. Bring to the boil, cover and reduce heat to low. Simmer for 20 minutes, stirring a few times, until apples are soft but not falling apart.
- Meanwhile, combine the flour, sugar and margarine in a medium bowl, and mix with a large spoon until smooth. Add crushed Weet-Bix and continue to stir – using clean hands if necessary – to evenly coat Weet-Bix in the mixture and create a crumble.
- Remove apples from stove, stir through lemon juice and sultanas. Scatter the crumble mixture evenly over the apple filling.
- Bake crumble for 20 minutes, until golden and bubbly. Cool slightly before serving warm, or make in advance and serve at room temperature.
Tips:
- Top with a dollop of Greek yoghurt to serve, if you wish.
- We left the peel on our apples but you can remove it before slicing.
- If you don’t have a oven-proof skillet: cook apples in a saucepan then carefully transfer to a 20cm round or square baking dish, before topping with crumble and baking.
